They're baked in a pan, take much less time to prepare than cookies and are just as delicious -- a great addition to any lunch box! 2 1/4 cups all-pur- Back to pose flour 1 teaspoon ARM & School HAMMER Baking Box Soda 1/2 teaspoon salt yrteTreats 3/4 cup (I 1/2 sy of: ARM &sticks) butter or mar- garine, softened -'x'~dMER BAKING 1 1/2 cups firmly ~0DA packed light brown sugar 2 large eggs 1 teaspoon vanilla extract 1 cup chocolate chips 1 cup butterscotch chips 1/2 cup chopped nuts (walnuts or pecans) Preheat oven to 325 F. Grease sides and bottom of a 9- x l3- inch pan. In a medium bowl, combine flour, baking soda and salt. In a large bowl with mixer on medium speed, beat butter and brown sugar for one minute. Add eggs and vanilla and beat until light and fluffy. On low speed, mix in the flour mix- ture until blended. Stir in the chips and nuts. Spread batter into pre- pared pan. Bake 35 minutes or until a toothpick inserted in center comes out clean. Cool at least 1 hour before cutting into bars. Makes thirty-six 2 l/2- by l-inch bars. CARROT CUP- CAKES WITH CREAM CHEESE FROSTING Sometimes you might pack carrot or celery sticks in your chil- dren's lunch boxes to get them to eat veg- etables. Here's anoth- er way to include veg- etables -- bake deli- ciously sweet carrot cupcakes. They'll help give kids that extra boost they may need in the middle of the day. 1 cup all-purpose flour 3/4 cup sugar 1 teaspoon ARM & HAMMER@ Baking Soda 1 teaspoon ground cinnamon 1/2 teaspoon salt 2 large eggs 3 tablespoons frozen orange juice concen- trate, thawed 1/3 cup veg- etable oil 1 teaspoon vanilla extract I cup shredded car- rots 112 cup raisins 1/2 cup chopped nuts, walnuts or pecans Preheat oven to 350 F. Place paper liners in one dozen 3-inch muffin pan cups. In a large bowl, com- bine flour, sugar, bak- ing soda, cinnamon and salt. In a small bowl, beat eggs lightly. Stir in or- ange juice concentrate, vegetable oil and vanilla. Stir egg mix- ture, carrots, raisins and nuts into flour mixture just until flour is moistened. Spoon into cups, filling each a little over half full. Bake 20 minutes or until a toothpick in- serted in the center of one cupcake comes out clean. Cool in pan on wire rack 10 min- utes; remove from pan and cool completely, then frost. CREAM CHEESE FROSTING 3 ounces cream cheese, softened 3 tablespoons butter, softened 2 cups confectioners' sugar 1/2 teaspoon vanilla Sprinkles for decora- tion Combine all ingredi- ents except sprinkles in a medium bowl and mix until smooth and well blended. Frost cupcakes and top with sprinkles. Makes 12 cupcakes. POPCORN Int/Ext.
